Does anyone have a Cold Tunafish Casserole Recipe??

I am 6 weeks post op and am craving a cold tunafish pasta salad!  It is so hot and muggy here that even though I would love a hot tuna fish casserole I will be just as pleased with a cold casserole.  I have nice Whole Wheat Shell noodles to use :)

Whatever you can pass on will be very helpful!

This is my recipe...I call it Tuna Macaroni Salad!!

1 package (12 ounce size) elbow macaroni
1 can (6 ounce size) tuna, drained
2 stalks celery, chopped
2 tablespoons chopped sweet onion
1 can (10 ounce size) baby peas, drained
1 cup mayonnaise(fat free or light)
2 tablespoons sweet pickle relish
salt and pepper to taste
3 hard-cooked eggs, quartered
1 pinch paprika, for garnish
      starting weight...307 Surgery weight..274 Onederland...198 (3/6/10)

I am just curious, have you ate pasta before? The reason I ask is that I am a little past 3 years out and still unable to eat pasta without getting very sick...Ive tried all kinds, including the whole wheat pastas...Just dont want to see you getting sick, so be careful...

I have always loved tuna noodle casserole but I don't eat it with pasta. Here are the facts for a 2 oz serving of whole wheat elbow pasta

Serving Size: 2oz (57g); Calories: 190, Total Fat: 0g, Carbs: 42g, Protein: 6g

I most likely wouldn't even go there almost 3 years out. That's a lot of carbs. Then when you make it, you add, flour & milk which both have carbs. Besides, you have a new pouch. Take it easy and maybe just eat some of the sauce and skip the pasta.

I make a cold tuna salad with Albacore tuna, some canelli beans, purple onion, a small amount of olive oil and red wine vinegar.  Add S&P to taste.  Some fresh Basil is also good in this..., and other fresh ingredients, tomatoes, cucs, even Hard boiled egg.   Use the beans instead of pasta in your recipe...
