Hi, I am about 3 months out and have been only able to eat my home made chili and have gotten really sick of it.   Does any one have any recipes that would be good for me right now?  Thanks

 I am collecting recipes as I go along as I am only 9 days post op.  I would love to share one with you.
It's summertime and we all like potato salad, don't we.  

Classic Light Potato Salad

1 pound small white potatoes
1/4 C non fat sour cream
1/4 C low fat mayo
1 Tablespoon of sweet pickle relish
1 Teaspoon Dijon mustard
2 Tablespoon finely chopped celery
1 hard boiled egg, chopped
1 hard boiled egg white, chopped
salt to taste
2 tablespoons finely chopped red onion
pinch of paprika for garnish

boil potato, let cool, add chopped eggs, celery and red onion.  Mix in mayo and sour cream, Dijon mustard and sweet pickle relish.  Salt and paprika.

Fruit ****tail Cheese Ball   Take one can of fruit ****tail ( I use the no sugar added)and one small can of mandarin oranges...Drain the juice...Take a hand held potato masher ( or one of those hand held pastry dough cutters works that you use to cut the shortening and flour together for pie crust) and mash the fruit...Mix in one small box of sugar free vanilla pudding...Mix in 3 packs of softenend lite cream cheese...Form into a ball, will be kinda sloppy to work with...I then chopped up some walnuts ( can use pecans) and spread 1/2 of them out onto a sheet of aluminum foil...Place the cheeseball down on top of the nuts...Sprinkle the rest of the nuts on top and around the sides...     Pineapple Pecan Cheese Ball   2 packs of lite cream cheese 1/2 cup diced green peppers 1/2 cup diced onions 1 can of crushed pineapple ( drain juice) pinch of salt 2 packs of Buddig beef ( sliced) reserve one to roll the cheeseball in 1 cup of chopped pecans ( I used walnuts)   Mix all the ingredients into a ball...Dice up the second pack of beef and lay 1/2 of it on a sheet of foil...Place cheeseball down on the beef...Use remaining beef to cover the top and sides...   For a bigger cheese ball, sometimes I add an extra pack of cream cheese   **********************************************************************************************
