Camping recipes help

I'm going camping this weekend and i'm in desperate need of easy recipes.
I'm 2 months out.
Last time I went camping a barely ate anything.
Any help would greatly be appreciated

Are you camping in a trailer or a tent??

I camp all summer and I am two months post op as well.  I use my crockpot all the time. It keeps the trailer form heating up and the recipes are moist and yummy.   there are a tone here on this thread and I sometimes just google Crockpot Recipes

If you're going to be doing lots of grilling for the family - plan on doing the grill packets made from foil - seems like it keeps foods moister and more pouch friendly. there are tons of recipes on line that  you can browse - just google them. My favorite is anything with italian dressing, peppers and onions (chicken, brats, fish, even burgers).  Another good one is regular jarred salsa on a burger and cooked in the foil. Yummy!!

If your family is doing BBQ Chicken it can often be too dry for our pouches - chop up your piece of chicken and add either sour cream or mayo and a little relish to make some wonderful chicken salad.

I'm jealous - I love to camp but with both kids going away to college this fall, I'm saving up my time off for delivering them to their schools. I wanna go camping!!!!!!!!!!!!!!!!!

I just got home from camping and im going again in a week. This was my first camping trip since surgery. I took my bullet and made up some little baggies of protien mix ( enough for 1 shake) some frozen fruit to add in. Instant oatmeal ( quaker weight control) Shellys bites frozen in a baggie.

 I also cut up chicken breast im a large zip lock and added onions and bell pepper and fajita seasoning and sealed the bag and through it in the ice chest,made cooking dinner really easy.

I also took cans of chili beans and lots of fruit and chicken salad and lettuce leaves. And my new favorite salad.

          CUCUMBER SALAD

 

 

Ingredients:
1 cucumber
1/4 - 1/2 a medium sized red onion (to your tastes)
2 small tomatoes or 1 large
Handful of olives (kalamata or plain black, whatever you like)
Balsamic vinegrette dressing (I use white)
Feta cheese

Peel the cucumber and then remove the seeds from the cucumber and tomotoes and cut everything into bite size pieces (except the onion, which I slice into thin slices). Toss in some feta to your tastes and then pour about 1/4 cup of vinegrette over the salad and mix. Viola!

How about some egg omlettes cooked over the fire in an iron skillet...add diced turkey, turkey ham, cheese, green and red peppers, onions, mushrooms, diced up tomatoes ( I use a can of stewed tomatoes) Whatever you want to toss in it...

Pan of boiled eggs to cook ahead for breakfast or snacks...Or could make egg and or tuna salad...

Pot of ham and beans over the fire...good protein... Or a pot of chili...

I guess it depends on how you camp. We go without electricity or running water. I own 2 different sizes of iron dutch ovens. The begining of June I spent a week camping like this. We ate beef stew, roast chicken that was extremely moist and chili. Also grilled chicken and steak over the fire. It was all so good.

she had a healthy version of a hotdog recipe.
it was like half a hotdog cooked inside a halfed zuchini with the insides scraped out.
looked good and you wouldnt have to feel like you couldnt eat camping food
like everyone else.

shish kabobs are the way to go.

Think chicken chunks, peppers, onions.
Grilled shrimp and tomatoes with cajun seasoning served with a side of hummus.

Egg Salad, chicken salad, tuna salad....
Just get creative and plan ahead of time.

We just went camping this last weekend and I had found this fun idea for eggs so we tried it out. Boil large pot of water. Crack 2 eggs into ziploc bag. (We used egg beaters) Add your ingredients. (We used cheese, mushroom, onion, and bacon pieces) Close bag, but leave some air in the bag. Mush up your eggs until mixed well. Put bag into boiling water. Boil for 10-12 minutes. Open bag, and release on to plate. Enjoy! It turned out great! We will definately be making them again. Delicious and super easy!
