Zucchini Anyone??

Hello,

I am looking for some yummy recipes to do something with all my zucchini. I have done the pasta-less lasagna, breads and muffins.

Any other ideas on cooking it??

Zucchini Casserole

1) 2 Tablespoons butter
2) 1 1/2 lbs zucchini, unpeeled, washed and sliced
3) 2 eggs, beaten
4) 1 Tbsp unbleached flour
5) 1/2 tsp dry mustard
6) 1/2 tsp ground nutmeg
7) 1/2 tsp salt
8) Dash of pepper to taste
9) 1 pkt Splenda
10) 1 cup heavy cream
11) 6 ounces (or more) sharp cheddar, shredded (or crumbled)

Pan saute sliced zucchini in butter until fork tender. Let cool - set aside
Combine items 3 through 9 in medium bowl
When zucchini is cooled (so as to not cook egg), add to bowl of mixture.
Add cheese and heavy cream
Pour into sprayed casserole dish (I used a dish that would allow for a 2 1/2 inch thick casserole)
Bake for 30 minutes at 325 Degrees
Let cool to set
Serve and enjoy!

I saute an onion and garlic in olive oil add 4 or 5 cut up zuccinni and a large can of tomatoes add just enough water to cover the zuccini. Add 2 heeping tablespoons of chicken bullion  and 1 whole jalepeno. Cook over medium heat until the zuccinni is tender.Spoon into bowls and top with shredded jack cheese.

A friend suggested that I use zucchini in place of peppers in my favorite stuffed peppers recipe. The only extra step is to boil the zucchini for about 10 minutes then split it and hollow it our. I plan on trying it one night this week.

I'm a huge fan of just filling zucchini with turkey burger, onions, mushrooms, and a touch of sauce and then loading the shredded cheese over top. I could eat it for days!

Or simply sauteeing it with garlic and ICBINB spray.

I often slice it (the long way) brush with olive oil, sprinkle with herbs and grill it, yum!
or
saute some minced garlic and chopped onion with sliced (rounds) zuchini. Add sliced tomatoes (diced canned is ok too) when veggies are halfway cooked. Sprinkle with italian seasoning and cover until hot and bubbly. Sprinkle with mozzerella and cover until melted.
or
slice in half (long way) and scrape out seeds, fill with ground meat mixture, sprinkle with cheese and bake

I have taken chicken breast cut into small chunks and cooked in a skillet with olive oil then add zucchini and or yellow summer squash and continue to cook till tender then add some diced tomatoes and season as you like. It's pretty tasty. You can also add onions and or mushrooms or anything else that sounds good.

I also just sautee the zucchini and yellow squash in low fat margirin or olive oil with peper and a little chili powder and its very good. Cook till tender. I have a friend that likes to steam these sqaushes till tender and enjoys them. I hope this gives you a few ideas.

Ohh, just what I was looking for! Can anyone tell me how to pick a good zucchini??

Im dying to try zucchini cakes.

Looks like just shredded zucchini, parm cheese, mozzarella, fresh basil, egg and couple tsb of flour. Make patties and pan fry. Sounds awesome! Id like to try one pancake and a couple turkey meatballs with marinara as a dish.

I also want to try to make 'pizza boats' stuffed zucchini. cut the zucchini length wise, scoop out the insides and microwave the halves for about 5 minutes.  Fill with your favorite pizza toppings and bake.
