Chicken Taco (in a Crockpot)
4 boneless skinless chicken breasts
1 can of black beans
1 cup whole kernal corn
1-1/2 cups chopped mushrooms
1 cup chopped onion
1 pkg of Taco seasoning
1 cup salsa
Throw it all in a crockpot and cook on low for 8-10 hours. Serve straight out the pot, or with tortillas, or taco shells, or on a bed of lettuce, or on a potato! The options are endless!

I make an alternative version of this:
4 boneless skinless chicken breasts or thighs (frozen is ok!)
1 can of black beans, drained
1 can of corn, drained (I usually just use 2 cans of beans instead)
1 jar of salsa
1 brick of cream cheese (low-fat or FF is ok)
Chicken goes on the bottom of the crock pot. Dump the salsa, beans and corn on it. Leave it on high for 4-6 hours. Put the brick of cream cheese on top for the last 30 mins of cooking. Before serving stir--the chicken will shred and the cream cheese will make the whole thing creamy. The chicken ends up really moist. Makes a great filling for enchiladas. I've even topped it with shredded cheese and make it into a tortilla pizza.
