 I found this recipe in the forums awhile back but i havent tried them yet so if you make them let us know how they turn out.


Pancakes

2 tbsp wheat flour
1/4 cup ff ricotta (or greek yogurt-- I prefer yogurt!)
1/4 c egg beaters
packet of Splenda

Hi there!

Cheesecake Cottage Cheese Pancakes

 

1/2 cup cottage cheese
1 egg
3 Tablespoons Whole Wheat Flour  or Multigrain pancake mix
1 Tablespoon Sugar free Cheesecake pudding mix
1 tablespoon sugar free Jelly or Jam

Whiz in a food processor first 4 ingredients Add a little water to make batter thinner if too thick.
Spray pan with non stick spray,.
Spoon mixture on to hot pan Cook on low till bubbles appear, and looks a little dry, then flip and cook till done,
Microwave Jelly and drizzle on pancakes
Make sure you make then small it is better for flipping.

I am eating the pancakes from eggface's site right now... and omg! They are so good. I couldnt find SF lemon pudding mix, so I used SF cheesecake pudding mix and a little lemon juice. I also mixed a little SF DaVinci Vanilla syrup with my orange marmalade.. yummy.

First of all, thank you to everyone *****plied.

I tried the chocolate banana pp from eggface's site....i must have done something wrong because the center was a bit gooey...and i couldn't take the texture.....

I'm wondering if i had the heat to high and didnt cook them long enough.... so i will try again to see if i can perfect them.... because i crave and love pancakes.....so with me luck...

My cottage cheese pancakes are 1/2 C. Cottage cheese, 1 egg, and 3Tbs multi grain pancake mix (I like fiber one). I also add 1 pkt splenda and a splash of vanilla, but you don't have to. I cook mine on medium high. Do NOT make them larger than a silver dollar, or else they'll be gooey in the middle, and they do take quite a while to cook. When you filp them, give them a good squish down too. I top mine with peanut butter and sugar free syrup, OR, I also like to put some fat free cream cheese on them and nuke some sugar free jam (I love strawberry or blackberry) for about 15 seconds... it makes it syrup-like. OR, I'll top them with sugar free apple pie filling and sugar free caramel and pecans.. the options are endless.

Here is what I make (this is a double batch)

2 cups cottage cheese
4 eggs
1 medium onion ( chopped and sauted in 1 tbspn butter) cool before adding it to mixture
1/2 cup low fat shredded moz ch
1/2 cup 2% chedder shredded
6 tbsp flour
salt and pepper ( I add garlic sometimes)

mix all together

to cook ( I use a sm ice cream scoop) 2 scoops per cake ,  med high heat say with pam before you start each set of cakes.  Hint when you see it bubblen (like reg pancakes) thats the hint to turn them  this recipe make 10 sevings 2 cakes each

I like to put a slice of cheese and some turkey or ham inbetween 2 cakes and heat up and mmmmm yummy
