Pineapple Upside Down

Hello, this is the first time I have posted on here.  I am not the greatest cook, but I am trying.  I have my book group at my house next week.  I would like to make a RNY healthy pineapple upside down cake if that is possible.   Does anyone have a healthy but delicious recipe?  If not, do you have another cool refreshing desert that everyone will like?  Thanks in advance!   Melinda

A very easy cake I like to make is:

1 box Angelfood cake mix  (the just add water kind) 
1 can crushed pineapple  (20oz)

Yes, just these 2 ingredients......

Mix together and bake in 9x13 pan at 350' for about 30 minutes.  When you mix this up, it will start to "foam"....that's normal

This will serve 12 - 18 people depending on how large you cut the pieces

Top with a dollup of CoolWhip and some fresh fruit.  On 4th of July I used sliced strawberries and blueberries for red, white and blue.  It is good with a pineapple chunk, cantalope chunk or whatever suits your tastes 

This is WLS friendly and low calorie.....

Pillisbury has a low sugar box mix which has half the sugar. Follow directions then.....Pour onto a cast iron frying pan which you have.....

melted 3 tbs of butter
pat down splenda brown sugar...thin layer
lay down sliced pinapple in splenda(not syrup)
put a M cherry in the center of each pineapple
Pour on batter

Bake


sometimes I sub the juice of the pineaple for some of the liquid on box.

I make protein upside down muffins!
1 scoop vanilla protein powder
3 tbs. multi grain pancake mix
1tbs. sugar free vanilla pudding mix
blend all dry ingredients, then add
3 Tbs. Canola oil
1 egg
2tbs sugar free torani syrup (I use vanilla)
3tbs. milk
1 drop imitation butter flavoring
Mix well
In another bowl mix 1 tbs. smart balance (or any other flavor buttery spread) and 3 Tbs crushed pinapple in juice (make sure it's not packed in syrup!) and 1 tsp. splenda brown sugar. Put 1 drop of pinapple mixture in each muffin tin, then cover with protein cake mixture. Bake at 350 for 15 minutes. This recipe makes about 5-6 muffins.
