Broccoli Salad

Ingredients:

4 cups broccoli florets (small pieces)

1/2 lb. of bacon or not

1/2 cup apple, diced

1/4 cup red onion, diced

1/4 cup raisins

1/4 cup sunflower seeds

1 1/2 cup mayonnaise

4 Tbsp. lemon juice

1/2 cup sugar substitute (more or less to taste)

Directions:

 

In a good size pot (6 quart or larger) of boiling water, place the florets of broccoli and coo****il water just reaches a boil again. This will result in tender-crisp broccoli.

Once water reaches a boil, remove broccoli from heat and dump into a colander.

Douse with cold water to stop the cooking.

Cook the bacon until crispy. Drain on paper towels and then crumble.

Toss together the apple, onion, raisins, sunflower seeds and bacon. Add to the broccoli in a large bowl. Mix in the mayonnaise and lemon juice. Add the sugar. Toss to coat.

I make this but use 3 pieces of turkey bacon - fried crisp and crumbled.  Cuts down on fat but still has good flavor!  I have nevr made it with apple - sounnds good!  Sometimes I use dried cranberries and walnuts.  My favorite way!  You can also add some shredded yellow cheddar to it - yum!
