4th of July picnic...something easy and WLS friendly??
We are throwing a party here that day so I am making pulled pork in a crock pot for sliders(rub with salt and pepper and garlic salt, pour 1/2 can beer in bottom, put into crock pot for 8 hours on low and then shred with forks--top with SF BBQ sauce--others put on dinner rolls, I eat meat alone), apricot chicken (frozen chicken thighs in crock pot, top with 8 coarse chopped onions, mix jar SF apricot jam, 1/2 tsp sesame oil and 1 tsp five spice or pumpkin pie spice--either works well----pour over onions and chicken, cook 8 hours on low),4 bean salad (I use FF italian dressing with four types of canned beans that I rinsed well), cherry tomatoes and cheese salad and lemon pies (got recipes here several days ago--tried one and it was great--lemon pie #2). Everyone is binging a dish so that should be enough food.
I was just on a houseboat for 5 days with another gal had her surgery about a year ago--the two of us ate "regular" food like everyone else--we just split a meal and still had lots left over. We went to the marina one night for dinner--we both ate 1/4 a hamburger and about 3 fries and were done. She has lost 82 pounds and is now a size 8 while I am nine months out and have lost 76 pounds and am down to a size 22 so I have a long ways to go yet. Neither of us eat milk products or alcohol but everything else stayed down. Of course I was careful aobut what I tried because houseboat is small and there is no place to throw up in private. I have a recipe called "Chicken In A Bag" and its really good!!!I hope you enjoy!
Ingredients:
1/2 cup of sugar free barbeque sauce
1/4 cup of sugar
4 teaspoons of baking soda
3 eggs
1 bowl of cubed sliced pieces of chicken
Ziploc Bags (please view the method to see how to make these)
1/2 cup of milk
Method:
Crack 2 eggs into 8 ziploc bags,make sure all the air is out of the bag and then zip it up,wait 10 to 15 minutes depending on how many bags your doing (let me know how many your doing if you want to do this recipe and I'll tell you how many minutes),once that is done take a medium sized pan and place 1 bag in the pan at a time.
After you've placed one bag in the pan wait up to 4 minutes for it to fully cook and be a little bit burnt,the egg yolks must be fully cooked before you can take out the bag (caution:the bag will be hot),wait up to 2 minutes for it to cool down,then pour 2 teaspoons of baking soda per bag and make sure the air is out of the bag and zip it up,mix it all around by moving the bag around.Wait 3 minutes before the baking soda blends in with the egg yolks,if it doesnt let me know.
Then you can start putting two pieces of chicken in each bag,8 teaspoons of milk per bag,9 teaspoons of sugar per bag,and make sure air is out and zip it up,mix it all around by moving the bag around.
Wait up to 4 minutes before it fully blends in with the yolks.
Then you can start pouring the rest of the ingredients in the bags,do all the ingredients.
