blueberry muffins

Here's a new recipe for blueberry muffins - my son can't leave them alone! 

1/2 stick butter
1 C Splenda
1/2 tsp salt
1/2 c SF applesauce
2 extra large eggs
2 tsp baking powder
1 1/2 c white flour (was going to try to sub 1/2 c whole wheat but I am out!)
1/2 c soy flour
1.2 c FF milk
1 tsp vanilla extract
2 1/2 c frozen unsweetened blueberries (fresh OK)
additional Splenda and cinnamon for sprinkling

preheat oven to 350.  Cream butter and Splenda until light.  Beat in eggs, one at a time, beating well after each addition.  Beat in applesauce.  Add baking powder.  Add flours alternately with milk, beating well after each addition.  Stir in vanilla and blueberries.  Spray nonstick mini-muffin tin with cooking spray and fill with batter (OK to mound slightly over the edge - batter is stiff).  Sprinkle with Splenda and cinnamon, if desired.  Bake mini-muffins 18-20 minutes, test to be sure that they are done.   Remove from oven, and in 5 minutes tip each muffin to release steam or remove to cool on a rack.

Makes:  24 mini muffins, each has:  80 calories; 3.8 g fat, 10.4 g carbs, 1.8 g sugar, 2.7 g protein.
