So I bought some greek yogurt today, but it is just plain vanilla, and I am not really a vanilla fan. How do you all eat your greek yogurt?

Add fresh or frozen fruit...  You can also add SF jams or syrups to give diff flavor.

Sprinkle a few tablesponns of Kashi (or Bran Buds) cereal for crunch... or a few sliced almonds.

Buy the unflavored version, use it with dip mixes, use in place or Sour Cream or add your own flavors and SF Jams/Fruit

I usually eat Greek Style most mornings for breakfast.  I do buy the plain, and I put just a little bit of splenda brown sugar in it with fruit and bran buds.  I have never loved yogurt, and I do love this!!

I use the plain greek yogurt most of the time and make 2 different dips with it:

8 oz greek yogurt
4oz ff cream cheese
4oz feta cheese
1 tsp minced garlic
1 cucumber (shredded)

Mix greek yogurt, cream cheese, feta cheese, and garlic.  Allow to sit at least 3 hours. Shred cucumber over paper towel and then salt and pepper.  Allow to sit for 15 minutes to absorb moisture.  Add cucumber to dip and stir.  Eat on fiber crackers, veggies, meat, or with nothing at all.

8oz greek yogurt
4oz ff cream cheese
2 tblsp sf cool whip
1 package of sf jello pudding

Blend all together.  I sometimes add milk depending on the thickness I want at the time.  Eat with fruit or by itself.

As far as the vanilla greek yogurt, I tried some last night with fresh blueberries, strawberries, a dash of cinnamon, and a dash of Splenda.  Good luck!
