Need some food for Jimmy Buffet Tailgating on Tuesday

this is my first tailgating/jimmy buffet partay since my WLS.  Need to find some WLS friendly foods to take.  any ideas?

Here are some suggestions I have.... Buffalo Chicken Dip, Spinach and Artichoke Dip or fresh fruit.  Have fun at the concert.

I know a little about island based parties...and I know a little about food....  I know too much about Rum....  so maybe a lttle of each will help your tailgating be the most popular dish out there...

Island Kissed Shrimp

Ingredients:

   1 lb shell-on large Shrimp, uncooked

   1/3 cup Coconut milk, canned and sweetened

   2 Tbsp Lime Juice

   1 Garlic clove, crushed

   1 tsp Red Chili Peppers, seeded and minced

   1 tsp ground Cumin

   1/2 tsp ground Coriander

   1/4 tsp ground White Pepper

   12 to 18 fresh Pineapple Chunks

 

Island Pesto:

   1 cup flaked Coconut

   1 cup chopped Cilantro

   1 cup chopped Green Onion

   2 Tbsp fresh Lime Juice

   2 Tbsp minced fresh Ginger

   1 to 2 tsp minced Garlic clove

   1/2 tsp Salt

   1/2 cup Peanut or Olive Oil

 Preparation:

Peel and devein shrimp retaining tails, if desired; set aside. Combine coconut milk, lime juice, garlic, red peppers, cumin, coriander and pepper; pour over shrimp. Marinate no more than 1 hour. Thread shrimp and pineapple chunks on skewers. Broil or grill, 4 minutes per side, or until shrimp are done. Take sip of Cruzan rum and love it...

EWWWWWW!  This sounds great!  Every Friday night a group of friends get together for Happy HourS and I am always making some kind of grilled appetizer.  This is going to put to the head of the cool cook line.

How are you? I know what Island Faire and Jimmy concerts are all about! Can we substitute light coconut and coconut milk and get the same results? I think this is a dish I am going to have to make this weekend while sitting around the pool in sunny AZ.

awww Jim,   we even had an extra ticket if you could have made it to pittsburgh!

concert was great,  I ended up taking plain shrimp ring, guacamole and some fruit, and a sugar free dessert.  Lots of other food there.   THis was my first Buffett tailgate where I had no alcohol and did not focus on the food.......it was an awesome night!!
