I have this recipe from my South Beach days for a peanut butter cookie:

Peanut Butter Cookies

1 Cup Crunchy Peanut Butter
1 Egg
1 Cup granular Splenda

Beat egg. Mix together all ingredients. Spoon quarter-sized balls onto a baking sheet sprayed with non-stick spray or "I Can’t Believe It’s Not Butter" spray. For a "sugary" taste, dip the bottom of a glass into granular Splenda, and press it on top of each cookie.

Bake for 10-12 minutes in a preheated 350 degree oven.

I've never used the natural peanut butter in these, but I don't see why not.  Go for it!

So that's for the entire recipe? Divide it by how ever many cookies it makes.. right?

That's right! I make 15 cookies with my recipe whi*****ludes the aforementioned as well as 1 tsp of vanilla and 1/2 cup of Heartsmart Bisquick. Comes out to about 120 calories per cookie, which I sometimes have for breakfast. I store them in a Gladware container.
