LOW Carb: Hanky Panky Hamburger Casserole x-post
I've had a lotta people asking for this, so here ya go...enjoy! too easy...super low carb, and good for you... have fun, love life...

Hanky Panky Hamburger Casserole
Ingredients:
1 lb. hamburger, lightly browned
1 sliced shallot (1 sm.)
1 layer sliced carrots
1 layer chopped celery
1 layer black beans (or pintos) out of a can (but drained and washed well)
1 layer fresh green beans….(must not be canned)
1 quart of chopped or diced tomatoes (with juice)
1 minced garlic clove
1 layer of green peas (you can sub blackeyed peas if you can’t handle the green peas)
¼ tsp onion powder
¼ tsp coriander
¼ tsp nutmeg
½ tsp black pepper
Salt to taste
Topping:
Generous portion of sharp cheddar
Preparation:
Layer on the bottom of large casserole dish in this order:
Black beans (or pintos), celery, green peas, carrots, fresh green beans, shallot.
Mix spices together, put spices over the top of the veggie layers.
Add ground beef layer.
Add tomatoes with juices over the top of the ground hamburger layer.
Bake 1 hour at 350 degrees. Please preheat oven.
Add cheddar cheese over the top to form final layer, continue to bake for 6 minutes, then broil until golden top forms.
