Found this recipe in my files:

mock potato salad.

20 Oz Cauliflower -- frozen, bag
1/4 cup celery -- chopped
1/4 cup onion -- chopped
6 eggs -- boiled and chopped
1 cup mayonnaise
1/2 cup sour cream
1/2 cup cheddar cheese -- shredded
2 tsp yellow mustard

Bake frozen cauliflower uncovered at 325 for one hour to dry.

Let cauliflower cool and roughly chop.

Mix all ingredients together, cover and refrigerate overnight.

Add salt, pepper, etc to taste.

Description:  Fake Potato Salad
Ingredients: 3 cups cooked cauliflower
3-5 eggs
1-2 cup mayo
1/2 cup diced dill pickles
2 TSP diced onion
2 TSP pickle juice
Yellow Mustard to taste
Salt and pepper to taste
How To Prepare: Cook the cauliflower then drain, then add all the ingredients and put in the refrigerator overnight. This recipe tastes so good, you will have a hard time believing it is not the real thing!

i have made this and it is yummy!

my only suggestions is that you cut the cauliflower really small so that it resembles the texture of potatoes better, I also add green olives to my potato salad so I was really missing them, I added them and I must say it was perfect!
