Good casseroles or great dishes for soft food stage?

I will be starting the soft food stage next week and want to get my kitchen stocked to make some things that I can make and split up to freeze. Casseroles sound totally yummy to me right now so I need some ideas.....Thanks!

My soft food stage consisted on Ricotta Cheese, heated in oven with marinara sauce over it.
Scrambled eggs/egg beaters; crustless cheese quiche; cottage cheese with a sugar free Smuckers jam on it.

As for caseroles, I don't have a clue. Any caserole I ever made had noodles or dense protein or both in it.

You may want to ask your NUT for some ideas as well!

Shelly has some great recipes, here ricotta bake is a favorite of even non WLS family members.  Just reading her blog and seeing how she modifies recipes will give you ideas on how to reinvent many of your favorite foods to fit into our new lifestyle.
