Toss chicken, sliced carrots, onion, celery, cracked black pepper, fresh sage and a tymne in crockpot with 1 small can of fat free/lo sodium chicken stock. Cover and Cook on High 6 hours.

Pork Tenderloin:  add pork tenderloin with vidalia or walla walla sweet onion chunks, with low sugar bbq sauce to crockpot. Turn on High, cook till internal temp is 170.

Beef Pot Roast, same as chicken but add some beef broth or veggie broth vs. chicken stock. Omit sage and tyme. Try some Rosemary or whole garlic cloves.

It doesn't matter whether you're a lion or a gazelle
when the sun comes up you'd better be running.

cook till internal temp is 170.

That is just shy of Charcoal.  I would coo****il the internal temp is 145 and allow carry over heat to get to 150.  The meat would get too dry otherwise.

There are many recipes for chicken, beef, etc. in a  crockpot--remember to substitute low fat and sugar free where possible.  I use this website a lot:  http://www.recipesource.com/main-dishes/crockpot/indexall.html

Don't know a good chicken recipe for crock pot, but a good pot roast recipe...

1 packet of lipton onion soup mix (dry stuff in packets)
1 chuck roast (I trim off most of the fat)  around 3 lbs
2-3 carrots peeled and sliced in sticks
Small onion chopped
small red potatoes (so they don't get too mushy i like red...but you can use white)
If you/the family like a gravey instead of a broth, then add a can of golden mushroom soup (campbells before cooking).

Spice roast with pepper and garlic salt to personal taste then
Brown roast (quickly on each side just to get brown)

Put veggies in bottom of crock pot.  Add 2-3 cups of water.  Add onion soup mix.  Add Roast on top.
Cook in crock pot on low all day long...I leave it when I go to work and it is done by dinner.  Comes out nice and tender.  You can also add a little red wine to it also if you want...I don't usually but have in the past...a burgundy...but just a little.
My family likes it...simple and easy.

I have been keeping OH recipes for over 2 years and here is one of my favorites.

Crock Pot Chicken Fajitas
Original Post by Brenda Russell at 6:23 AM PST on 12/16/2007

Portage, INRNY (10/08/2007) – Paul Stanish, M.D.

These are really good tasting and good for you with all of the protein in them. I am not sure how much protein is in them but with the chicken and beans I am sure it is high.

Crock Pot Chicken Fajitas

4 boneless skinless chicken breasts
1 packet taco seasoning
1 can fat free refried beans
1 jar thick and chunky salsa

Place the chicken in the bottom of a crock pot. Sprinkle with the taco seasoning. I thinly sliced some onion on top of this but you don't have to. Spoon on the beans and smooth them over the chicken. Top with the salsa. You can cook this on either high or low. Top with a bit of cheese when this is done and melt. You can either eat these on a shell or on a plate. They are delicious either way. when the fajitas are done and just before serving them you shred the chicken with a fork.

One of my favorite Chicken Crockpot recipes is.

4 pieces frozen chicken breasts
1 jar light/no sugar added spagehtti sauce.
lots of garlic
Italian seasoning

Put frozen chicken in crockpot
pour in sauce
add as much crushed/pressed garlic as you like
add as much Italian seasoning as you like
cook on low 6-8 hours

During the last hour I like to add a can of black olives (drained) sliced onion and sliced green pepper.

I use to serve it over penne noodles but since surgery I just do the chicken, veggies and sauce with Mozzarella cheese on top.

The chicken will shred when you try to cut it.

My whole family loves this meal.

Throw chicken in the pot with a can of brocc cheese (or just broccoli sp) soup and some water. Let it cook on low. when ready shred chicken with fork, turn on high, add fresh or frozen brocoli.. until warm, serve over rice. You can also add some velveta or cheese when shredding. just let melt. I dont always have with rice, will eat just as is.

Chicken, salsa, taco seasoning. Cook on low, shred and serve as taco ect  meat. it is sooooo good. I like to add black beans too.

Chicken, can of green chilies or 2, navy beans and some chili seasonings. You can also add bell pepper, onion, garlic or whatever you like. This makes an awesome green chili. (you can use pork too )

tip on using chicken breasts in crock pot. Chicken can be added frozen. I leave at 7am and get home at 6. I add frozen boneless chicken breasts or thighs in the am and cook on low all day.

Diane, just remember, make cream soups your best friend when using your crockpot!!!  also, make them 1/2 fat,  Mushroom is my most favourite--you can use it with chicken, and makes a wonderful gravy when mixed with a 1/2-1/4 package of dry onion soup....I as I post have a crockpot full of chili cooking!!!  I'll put them into freezer containers so I always have something quick to grab...Good luck.....Patti K.
