Quiche recipe?

Looking for a good RNY safe spinach or veggie quiche, anyone??

INGREDIENTS

·                          2 cups Egg Beaters, Original

·                           

·                          1/2 cup skim milk

·                           

·                          1 pk. frozen spinach, squeezed dry.

·                           

·                          3/4 cup Fat Free Shredded Mozzarrella Cheese                  

·                                                

·                          1 small onion; sliced

·                           

·                          1/2 cup sliced red bell peppers

·                           ·                                                     

·                          1 tbsp. reduced fat grated parmesan cheese

·                           

·                          1/2 tsp. garlic powder (not salt)

·                           

·                          1/2 tsp. pepper

DIRECTIONS

1.    Preheat oven to 375 degrees.

2.    Stir to combine all ingredients except for the grated parmesan.

3.     spray glass pie plate wtih non-stick cooking spray

4.    Pour Mixture into glass pie plate

5.     Place dish in the oven and cook for 45 minutes.

7.    Sprinkle top of quiche with parmesan cheese (or use left over mozzarella).  Return to oven to melt. Approximately 10 minutes until golden brown.

8.    Remove from oven and allow to cool before cutting.

You are most welcome.  Once I learned the "basics" of making a crustless quiche, I was able to switch it up a great deal. I've used crab, shrimp, artichoke hearts, ham, etc.  Also, if you go on to eggfaces' page, www.theworldaccordingtoeggface.blogspot.com  you can search her egg bites. They are like little quiche. I make those often as well.

Broccoli-Cheese Quiche

Serving Size : 6 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup broccoli florets 2 tbsp chopped onion
1 cup cottage cheese 1/2 cup grated cheddar cheese
1/4 cup buttermilk 1/2 cup grated swiss cheese
2 eggs - beaten 1 dash nutmeg
1 unbaked pie crust -- (9-inch)
Steam broccoli 3 to 4 minutes. Rinse with cold water, drain and set aside. Combine cottage cheese and buttermilk in a blender on low speed. Pour mixture into a bowl and add eggs, onion and cheeses. Pour into a pie shell. Put the broccoli on top making sure to press florets into cheese mixture. Sprinkle top with nutmeg. Bake in 400 degrees oven for 20 minutes. Reduce heat to 350 degrees and bake an additional 10 to 15 minutes. Let set 10 minutes before serving. Serves 6.
