Soft Food Recipes?? Or ideas?

This Friday my surgeon has cleared me to start soft foods like cottage cheese, tofu, yogurt, etc.  Any other suggestions?  I've never cooked with tofu, and recipes will be appreciated!

I don't know if you wanted just tofu recipes or soft food recipes too.

Peanutbutter Ricotta Creme

1/2 cup partskim ricotta
1pkt. Splenda
1/2 tsp.unsweetened cocoa
1/2 tsp.peanutbutter
Mix together and eat.

Pumpkin Spice Ricotta-2 servings

1 cup part-skim ricotta
1/2 tsp.cinnamon
1/2 tsp. vanilla extract
1/4 tsp.ground nutmeg
1/2 tsp.ground ginger
2 pkt. sugar substitute
Mix together and eat.

Ricotta Cream Dessert-4 servings
2 cups skim milk ricotta
1 tsp. vanilla extract
2 tblsp.lemon juice or 1 tsp.lemon extract
2-3 tblsp. artificial sweetener

I also have a tofu cookbook.I can give you some recipes if you want them.Let me know what sort of things you want.

I love this:

fat free refried beans
a little onion (if you can tolerate it)
enchilada sauce (for moisture)

warm in microwave-sprinke with low fat cheese and a bit of low fat sour cream.

Refried beans has been one of my staples since surgery as it is one of the few things that doesn't bother my pouchy.  This week I added a bit of fresh salsa with diced avocado and you would have thought I was having steak and lobster it tasted so good.

It is so funny how the simplest things can make us happy now that we can't have much!  Our whole attitude about food is different.....I hosted a BBQ at my house this weekend and everyone brought wonderful food....and they felt "sorry" for me because I couldn't eat.....I told them I'm more into the company than the food....but I do miss a good glass of wine!!

Refried beans and avocado is lovely anytime.  BUT look up the calorie count on the avocado and decide accordlngly.

I decide how much I'm going to have, and if I'm going to have a half, I scoop out the seed and put the beans right in the half.  Each bit is a bit of bean and avocado.  Usually it's more like a quarter, sliced on the beans.  STILL tasty, but not quite as pretty. 

It is a nice decadent and healthy at the same time return to soft foods-but if you eat it every day you will not lose weight.

Lisa, during the liquid diet phase I was dreaming of devilled eggs.  When I got into the puree stage, I took 2 hard cooked yolks, mashed, and thinned it with a small amount of mayo and pickle juice.  I added onion powder, smoked paprika, and salt and pepper to taste. In a tiny bowl with my tiny spoon, it was a delightful treat, and has about 5-6 grams of protein.
