Easy Taco Soup--High in Protein
I have made this several times and it has become one of my favorites. Hope some of you enjoy this too. I also divide it down into freezer containers and freeze part of it for later.
Easy Taco Soup -- gotten from http://www.togetheratthetable.com website.
1 1/2 pounds diced cooked chicken
1 can diced tomatoes
1 onion, chopped
1 can tomatoes with chiles (Rotel)
1 can black beans, drained & rinsed
1 can whole kernal corn (can leave out)
1 can pinto beans
1 can pinkito beans (small pintos)
1/3 Cup sliced green olives
1/3 Cup sliced black olives
1 package taco seasoning
1 package Ranch Dressing Mix
Mix all ingredients together in a slow cooker.
Cook on low heat for 4-6 hours.
Or, if you prefer, heat the soup in a large pan on the top of the stove over low to medium heat for about one hour.
