Squash patty recipe - how to make this healthier?

I need to use up some squash in the fridge so I came up with a recipe I think the kids will eat too (dd doesn't like veggies).  They were very good, but I want to make them healthier.  They taste more like fried cornbread than squash.

I used:
4 yellow squash
1/4 onion
3 twists sea salt
3 twists black pepper
1/2 tsp minced garlic
1 large egg
1/4 cup mexican finely shredded cheese
1-pkg Jiffy corn muffin mix

Cut ends from squash, grate with cheese grater into collander.  Press as much liquid out as possible and put in mixing bowl.  Heat 1tsp of olive oil on large skillet & grate onion then add garlic.  Cook for a couple minutes and add to squash.   Add salt, pepper, cheese, and egg.  Mix together with fork then add Jiffy corn muffin mix until consistency is thicker- I added the entire pkg. (Here is where I think I should have added maybe wheat flour or breadcrumbs- better alternatives).  Add 2 tbsp more olive oil to pan and let heat up.    Scoop squash mix with tbsp and form patty with hand and add to hot skillet.  Brown on both sides.

You could take out the corn muffin mix and just add Flax meal instead... that would be healthier....umm... and well, I jst gotta say that you're braver than me and I respect anybody who can make a squash burger and get kids to actually eat it....maybe some beef base mixed with some format of oatmeal might make it more platable... but hey, I'm just a dude...

I've never tried flax meal, thanks for the suggestion.  I've got roasted flax with blueberries I've been sneaking in the kids oatmeal, they probably couldn't taste the difference. 

Surprisingly both kids ate two, ds loved them, and dd said they were good but she likes latkas more.  If you've ever had fried corn bread or fritters, tasted almost like that.  Hmmm...oatmeal- would you food processor it first?

Eggbeaters is a good replacement in cooked foods. Eaten straight, I can tell teh difference between these and real eggs, but they are pretty good.

I'll bet you could use 1/2 the package of corn muffin mix and get a good result
also, like others said, 1/4 cup of egg beaters or egg substitute in place of the egg

DON'T use fat-free cheese -- it does not melt or do well in recipes

you might try 2% shredded cheddar, but really if you are only using 1/4 cup for the whole recipe, it would not make very much difference.
