Ingrediants
12 oz 1/2 way cooked black eye peas. ( i buy these already 1/2 way cooked by the vegie section at my grocer)
1 tbsp red pepper flakes
1 garlic clove chopped
1/2 cup chopped onion
4 oz canadian bacon chopped
2 TBSP tomato paste
3 cups raw greens ( i used collard)
1 bay leaf
Prepare
cover peas w/ water add onion, garlic tomato paste, bacon, pepper flakes and bay leaf. Cook tilll almost done. Add water as you go to desired consistency.
I then add my rinsed medium coarse cut greens. Cover with lid and cook on low till greens soft.
Makes 6 (1/2 cup) servings at 105 calories per serving.
