Blueberry Almond cookies

2 cups Almond flour
1/2 cup Splenda
1 stick butter - softened
1/2 tsp salt
1 tsp baking powder
2 Tablespoons milk (maybe more)
1 tsp almond extract
1 egg yolk
2 tsp lemon zest
1/2 cup frozen blueberries (thawed, rinsed and drained)

Combine almond flour, baking powder and salt. In another bowl cream together butter and splenda with hand mixer. Add egg and beat. Next add milk, almond extract and lemon zest. Stir dry ingredients into wet. Fold in almonds then blueberries. If the dough looks too dry you can add a little more milk to moisten. Chill dough for 30 minutes. Heat oven to 375. Drop dough onto cookie sheet by the spoonful. Bake for 15 minutes.

I just baked a batch.. not too bad!

Oatmeal Chocolate Chip Cookies
1/2 pound (2 sticks) Margarine or Butter Softened
1 Cup Firmly Packed Brown Sugar or Splenda Brown Sugar
1/2 Cup Splenda
2 Eggs
1 Teaspoon Vanilla
1 1/2 Cups All Purpose Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt (Optional)
3 Cups Old Fashioned Oats,Uncooked
1 Cup Semi Sweet Or Sugar Free Chocolate Morsels



Heat oven to 350 degrees, beat margarine and sugar until creamy.Add eggs, and vanilla; beat well. Add flour, baking soda, salt; mix well. Stir in oats and chocolate morsel; mix well.

Drop by rounded tablespoons full on ungreased cookie sheet. Bake 10-12 minutes until golden brown. Cool 1 minute.   Makes about 4 dozen.


I'm not sure of the nutritional values, i didn't calculate BUT,
THEY ARE DELICIOUS!!
