Left over chicken

I need ideas on what to make. I have tons of left over grilled chicken and no idea what to make it into....any suggestions?????

One thing I made that was SO good…

 

Chicken “Shepherd’s Pie"

 

Ingredients:

 

1 lb chicken meat (can be leftovers)

1 jar Heinz fat free chicken gravy

1 can of mixed vegetables, drained

1 bag of cauliflower florets

2 tbsp I Can’t Believe it’s Not Butter +

¼ c. milk

Salt and pepper to taste

1 cup shredded cheddar cheese (I use full fat but you can use 2% or even fat free)

 

Directions:

 

In a pan combine chicken, gravy and mixed vegetables and warm through completely then let simmer to reduce liquid a little.

 

Boil cauliflower florets until soft. Drain and put in a bowl. Add “butter" and enough milk to get a good mash going. Or you can combine the three in a food processor.

 

Pour chicken/veggie mixture in a pie plate. Top with mashed cauliflower.

 

Top mashed cauliflower with shredded cheese

 

Bake in a 350 oven for 30 minutes.

Cherry/Curry Chicken Salad
Ingredients: 2 1/2 cups cubed rotisserie chicken breasts  or grilled chicken
2/3 cup dried cherries
1/3 cup finely diced celery
1/3 cup finely chopped apples
1/3 cup finely chopped pecans
1/3 cup seedless grapes halved

Dressing:
½ C. fat-free mayo
½ C. fat-free yogurt
1 Tbls. Splenda
1-2 tsp. curry pwdr.
Salt & pepper
Directions In a large bowl, combine mayonnaise, yogurt, salt, pepper. Add chicken, cherries, celery, apples and pecans. Toss until well coated. Refrigerate. Keeps well for a week in the refrigerator.

Place chicken in casserole dish...Slice up a few potatoes and put on top of chicken...Add some diced up onion...Mix together some cream of chicken soup with some skim milk to thin it down a little...Add some low fat cheese of your choice...Pour over the top...Cover with foil and bake until potatoes are done....Can use cream of mushroom, celery, or whatever type of cream soup you might like...

In foil place your chicken, add favorite veggies such as a slice or two of potatoes, onion, cauliflower, broccoli, baby carrots, celery...sprinkle with salt and pepper, onion powder and or garlic powder ( optional)...I put a few dabs of lite margarine in mine...Can use molly mcbutter flakes or I cant believe its not butter spray...close up foil into a pouch, bake until veggies are done...350 degrees

Shred up chicken, put in crock pot...add some chicken broth...toss in green beans, peas, chunks of potato, baby carrots, onions...coo****il veggies are done...

Shred up chicken, put in crock pot...pour barbecue sauce over it, cook slow until ready to eat...I like to make my own barbecue sauce with brown sugar, ketchup, mustard, diced up onions fine, pepper, liquid smoke...dab of water to thin just a little

Maybe you could use the chicken in an egg omlett, with cheese, onions, mushrooms, green and red peppers, tomatoes or salsa

Shred up the chicken, add a little water, taco seasoning mix....use for tacos or burritos...
