broccoli/ cauliflower bacon sunflower seed salad

  Sick of lettuce salads? Try this! EASY AND OH SO GOOD. Always a HIT! No one even knows it's low carb! Sweet, sour AND crunchy!
For a festive Holiday salad, use 16 oz of the broccoli only, and add 1 red pepper, cut in 1/2" square pieces to the list below--red and green, get it? Looks really pretty.


Ingredients: -1 bag (16 oz) broccoli and cauliflower florettes (or broccoli only, whatever your family prefers), washed and trimmed to nice bite size pieces
-6 pieces bacon, crisply cooked and broken into approx 1/2 inch pieces
-1/3 cup chopped red onion (they are really purple!)
-1/2 to 2/3 cup mayo, until it seems about right
-2 packets AS (i use equal)
-1 TBS of apple cider vinegar
-1/4-1/2 cup sunflower seeds
How To Prepare: Combine all the above--except the sunflower seeds---in a large bowl and toss well, refrig til dinner is ready. Just before serving toss in the SUNFLOWER seeds! Don't forget them! ENJOY!
Number of Servings: 4--6

Preparation Time: 15-20 minutes, unless you are slow, lol!

I got this as a weigh****chers side dish.  It is really good though I left out the onion and put LF Cheddar in it.  Used Bacon bits insead of cooking bacon.

I just had something like that from the salad bar at Ruby Tuesday last night. I went back for seconds...it was so good. They must have put sugar in there not that I see the recipe cause it had something a little sweet. Oh welll, hopfully they burned off fast since that was all the sugar I had.

I will definately try this!!

I have also made this pre-op, but with the addition of halved seedless red grapes.  Very good.  A very good addition depending on how many carbs you allow yourself.

Thanks for reminding me of this recipe.
