Looking for boneless wing recipe

My DH and I LOVE boneless wings...we'll basically I guess they are nuggets with wing sauces on them. Ive never been good at making wings so Im going to try to make the boneless ones.

I understand that the sauce is really the wing sauce (I got Franks) and melted butter?? We are low carb for the moment so thats not so bad, but how do I actually cook the wings?

Pan fry? then throw them in the sauce and mix? Just curious, dont want to waste the chicken! LOL

Im thinking of paring the wings with a roasted ranch cauliflower...something Im going to make up, I'll let you know how it turns out if youre interested!

You can do one of two things... depending on how much effort you want to put into it! lol

Sometimes, when I have a taste for boneless wings, I do the "naked" version and don't do any kind of breading... I just cut the chicken into chunks and season them a bit and cook it in a nonstick skillet, then toss with the hot wing sauce. (I like either Sweet Baby Ray's brand of hot wing sauce/marinade or Buffalo Wild Wings mild sauce, both are mild enough that my kids will eat it but have great flavor!) 

If I want to go through a bit more effort, I cut up the chicken chunks, then dip them in milk, then dredge them in a mixture of whole wheat flour, paprika, seasoning salt, and some italian seasonings... then I cook them in a very good nonstick skillet  with a very thin coat of olive oil.. turning carefully with tongs when browned on one side so the breading stays on. Once all the chicken chunks are cooked through, toss with wing sauce.

I never use butter for them, and my family LOVES these!!!

Hi Mary!

If you are doing low carb, dredge the chicken in egg, then crushed pork rinds .

You can then pan fry them or oven fry (coat cookie sheet with 2 Tbs. oil then cook in 375 degree oven, flipping half way through).

Although there are tons of sauces, the original wing sauce is on the "Frank's" bottle as far as measurements, but yes, it is "Frank's" and melted butter.

Happy eating, and yes, I would be interested in the roasted ranch cauliflower recipe......

Well, DH and I made the wings and cauliflower last night. I must say that all you could hear during dinner was the two of us saying "MMmgmmmggg, wow Yummmy mmggg!" LOL

Here is what I did (remember we are low carb, not low cal)

Cut up 3 large chicken breasts into about 3 inch long strips and seasoned with salt, pepper and garlic powder. I pan fried them in 2 tbsp canola oil until golden brown.

I melted 2 tbsp butter in a large bowl then added about 1/2 bottle Franks Hot Wing Sauce. When the chicken was cooked, I dumped them into the bowl and mixed with the hot sauce.

Meanwhile...DH worked on the cauliflower, not exactly ranch, but it was GOOD. Chopped 1 head of fresh cauliflower. Put them in a Ziploc bag. drizzled with olive oil and added parsley, salt, pepper, onion flakes, garlic powder and I think he threw in some red pepper flakes. Shake to coat.

Baked that for about 20 minutes at 375. Then we decided to add a little fresh grated parmesean and turn on the broiler.  Broiled about 5 minutes or so until a little color showed.

We plated everything up and had a little ranch dressing for dipping.

I tell ya...it was AWESOME! Definately will become a staple in our house!

WINGS
H-O-T Hot Boneless Buffalo Wings

PER SERVING (5 wings): 175 calories, 1.5g fat, 1,153mg sodium, 14g carbs, 4g fiber, <1g sugars, 27g protein

Pssst! You'll fool EVERYONE with these...

Ingredients:
8 oz. raw boneless skinless lean chicken breast, cut into 10 nuggets
1/4 cup Fiber One bran cereal (original)
1 oz. (about 14 crisps) Pringles Light Fat Free Barbeque Potato Crisps (or another fat-free BBQ-flavored potato chip)
3 tbsp. Frank's RedHot Original Cayenne Pepper Sauce
Dash of each onion powder, garlic powder, cayenne pepper, black pepper, salt
 
Directions:
Preheat oven to 375 degrees. In a blender or food processor, grind cereal to a breadcrumb-like consistency. Crush potato crisps completely. In a small dish, mix crushed crisps with cereal crumbs. Add spices and stir well.

In a separate dish, cover chicken with Frank's RedHot and toss to coat. Spray a baking sheet with nonstick spray. Give each chicken piece a shake so it's not dripping with sauce, and then coat evenly with crumb mixture. Lay crumb-covered nuggets on the baking sheet.
Bake in the oven for about 20 minutes, flipping halfway through, until outsides are crispy and chicken is cooked throughout.
