LOW Carb: Spicy Curried Crab Bisque

Spicy Curried Crab Bisque
Ingredients:


1 med. chopped shallot
1 red bell pepper, chopped
1 green bell pepper, finely chopped
1 yellow bell pepper, finely chopped
1 Tbs. olive oil
1 tsp. minced garlic
1 jalapeno pepper, minced
1 lb. lump crab meat
2 Tbs. curry power (Madras brand is very good)
1 cp. canned coconut milk (can be found in Asian markets)
5 cps. half & half

Preparation:

1. Saute onion and peppers in olive oil until soft.

2. Add garlic, curry powder, and pepper. Saute 30 seconds. Add crab meat and remaining ingredients.

3. Simmer gently 5 minutes- DO NOT BOIL.

Serve it like you mean t!  Super Low carb and good for you!  Tasty for those springtime meals....

Yummy! I have Dungeness Crab around all of the time. If I am lucky, we actually pull it from the Hood Canal in the late spring/early summer! Definately trying this recipe in the next few days!
