Low Carb: Springtime meals: Baby Greens with Pear-Cumin Viaigrette

Baby Greens with a Pear-Cumin Vinaigrette
Ingredients:

1 lb. baby greens (aka. mulitcolored fine springtime mix)
1/2 cp. cider vinegar
1 Tbs. grainy Dijon mustard
1.5 tsp. ground cumin
1 tsp. minced garlic
1.5 cps. virgin olive oil
salt & pepper to taste
Slice one large pear, small slices, moon shaped to be dressed over the salad

Preparation:

1. Combine all ingredients, except olive oil and pears, in a food processor.

2. Slowly drizzle in the olive oil to form dressing. Season to taste.

Which one of the USVI. Nice recipe. I live in MD, but I'm from STX.  I'm 7 days post-op (Lap-RNY).
