Recipes for Hotel Survival?

I apologize in advance if this question has been asked before.

My husband is on temporary duty in Arizona and I'm joining him for 5 weeks. The government has him in a hotel, but he's hoping to find a place with a small kitchen before I arrive. If he can't, we'll have to stick with the hotel. 

I had a gastric bypass 6 months ago and have lost 80 lbs, with 42 to go, so I want to stay on track, but I'm used to cooking most of my meals rather than going out.

We are both quite happy with oatmeal, wraps, salads, fruit and other foods that don't require a full kitchen, but I'm wondering if anyone has a few recipes that can be made using just a microwave or a one-burner stove? We'll have a small fridge and I'll buy a blender for shakes.

 Why not take a small crock pot with you and make crock pot meals? Meat and veggies in the crock pot, YUMMY!!!!

 Thanks for the great idea! I have a small one and a large one, but hadn't thought about bringing one along.

I just stayed at a hotel this past weekend.  It's a challenge.  I took some shrimp and ****tail sauce.  Another thing I thought of was an electric skillet or griddle.  Maybe even a George Forman grill or something similar would cook chicken and fish.
