Chocolate Pecan Shortbread Drops

Chocolate Pecan Shortbread Drops

Ingredients:

  • 2 sticks unsalted butter, softened to room temperature
  • 1/2 cup granular sugar substitute
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons chocolate extract
  • 1 cup soya powder or sifted soy flour
  • 1 tbsp baking powder
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup pecans, finely chopped                

    Directions:

    Preheat oven to 325 F. With an electric mixer, beat butter and sugar substitute on medium speed until light and fluffy, about 4 minutes. Turn speed to low and add egg, vanilla and chocolate extracts. Scrape bowl down, and then add soya powder, baking powder, cocoa powder and pecans, mixing until just combined.Drop dough by heaping teaspoonfuls onto ungreased baking sheets. Bake 12 to 14 minutes, until cookies are set. Cool on sheets 1 minute before transferring to wire racks to cool completely.

Donna, I have a question about this recipe? You have 1 tablespoon of baking powder but it's not in the directions. Should it be 1 teaspoon and just add when adding soy flour? It just seems like a lot. Just asking. I want to make sure it's the right amount before I try to make these.

Hi Teresa....Yes it is 1 tbsp. I checked the site where I got the recipe from, and checked it for you. I haven't had the chance to try them out  yet so let me know how they turn out.....Enjoy!
