Hey - we've got the same surgery date. My family camps alot in the summer too. Some of our old standbys will need some rethinking (hot dogs & grilled anything for me) but I can see us eating lots of eggs and fish. We tend to stay in campgrounds where we have power so I'll be packing up the crockpot and hauling it with me. I can fix anything in the crock pot- beans, chili, roasts, chicken, oatmeal, etc. 

Hopefully you'll get lots of good recommendations that I can steal as well.

I don't camp at all but my family does and i join them usually for breakfast, lunch and dinner.   Since I was banded I am going to have to rethink a lot of the stuff that i usually take out there... but.... I usually buy a sliced brisket at sam's... it is already sliced up and cooked and i just put it in a crock pot with beef broth.... I have a garden this year or will have... so i will be taking sliced tomatoes, cucumbers (in vinegar), squash (sliced and crocked potted with butter and salt and pepper),   for lunches i will make sure that i have sliced deli meat with cheese (rolled up like a rollup and eat that as my lunch... maybe even rolled up around a pickle... I know that we will have grilled shrimp (wrapped in bacon with a jalapeno and cream cheese put in the middle of the shrimp), bbq hamburgers and hot dogs (all without the bun... i have come to wrap mine in a lettuce leaf with all the mayo, must, ketchup (heinz one carb), pickles, onions, tomatoes)  same way with the hotdog (wrapped in a lettuce leaf with chili, cheese etc.).... also i  know that i will be making a quiche for breakfast... (without the crust) my parents have a trailer that has an oven... but also i can make the night before and just reheat.... also a rny person on here named eggface has a web site that she has a lot of recipes that are portable... but i will also make up a fruit salad or chopped fruit.... and of course we will be making fish... I will just grill mine instead of eating the fried that everyone else will.... i usually put on greek seasoning or cajun seasoning on it and grill away... i will just stay away from the heavy breaded sides and desserts..



 Look at me I have lost 61 lbs... God Is great...

My idea of camping is staying at the Radison LOL or camping in our RV.
I plan on eating things I normally would of prior to surgery,only tweaked a bit to fit our new way of life
Hamburgers=Turkey burgers
Potato salad with fat free mayo and low other stuff
Baked beans
taco salads
fruits and veggies
Pre cooked chicken or breasts ready to go on grill
will bring cottage cheese and eggs etc..
It should not be a chore to go camping and you should still be able to modify your foods to fit your needs.I pre make as many foods at home prior to camping. I know this is hard if your camping in coolers/tents.

I make chicken fajitas every time we go camping, and they are sooooo good.  I use the chicken tenderloins (I might try boneless skinless thighs this year though), some cumin, garlic powder, salt, pepper, red pepper flakes, whatever other spices you want to throw in there.  I cook lots of onions (my favorite part), and bell peppers.  I tend to cook them a little longer (softer) than most fajita recipes.  I toss it all together in the pan at the end.  Everyone else eats them with tortillas but I eat mine in a bowl with a little sour cream, salsa, and guacamole.  Very easy, especially since you can cut everything up and season it before you leave.  The only thing I really make on site is the guacamole (it can get icky if you make it too far ahead).

I get "volunteered" to make these for dinner if I am camping with a group.  If it is just my boyfriend and I, we usually have plenty of leftovers so that I don't have to cook dinner the day after we get home.

How about cooking your foods in foil pouches over the fire?  Such as...Place choice of meat : chicken tenderloin strips, ham steak, turkey sausage links onto a sheet of foil...I always spray the foil with cooking spray first...Toss on choice of veggies such as onions, green peppers, chunks of potatoes, cauliflower, broccoli,  mushrooms...Can spray on some * I cant believe its not butter*...add some Mrs Dash, salt & pepper, garlic powder, onion powder, whatever you like...Cover with another sheet of foil, fold around the edges...Bake on wire rack above the fire, or if you have a grill...

Put a big kettle over the fire early in the morning...chop up some beef roast into cubes, add some water and let cook slow for hours to make tender...I always drain the broth off that it makes because the fat in it doesnt like my tummy...Then after doing that I add my own cans of beef broth...Toss in some veggies such as tators, carrots, celery, onions, tomatoes, whatever you like...Cook slow until veggies are tender...Last 15 minutes add some corn, and peas if you like...Maybe some green beans...Just whatever you like will work...can also add chunks of cabbage if you like

Might put on a crock of ham and beans over the fire and let cook slow all day...Put some dry beans in the pot, lots of water, perhaps a ham hock, or diced up ham....Can add onions to it if you like...Make some corn bread and bake over the fire in iron skillet...

How about making some baked apples over the fire?  clean and cut apples in half, take out seed/ middle section...Place in iron skillet, put a dallop of lite butter on each apple, add some sugar, cinnamon...Or use splenda...Pu****er around the apples, cover with foil, bake slow over the fire...

In iron skillet...clean and slice up some apples, fresh pears, handful of fresh cherries, blueberries, raspberries, whatever fruit you like...Mix together some flour, sugar ( splenda) little bit of lite margarine, dash of cinnamon, handful of oatmeal...Toss over the fruit, and bake slow over the fire...Check every so often for dryness, might add touch of water if needed

How about putting some garden green beans/ fresh in a big pot, add some water, cook for about an hour, drain off water and refill with water...I do this to take the green paste out of the beans...Add some chopped onions, red potatoes, season with turkey ham chopped into cubes...Or turkey bacon...Add salt and pepper to taste...can add chunks of cabbage if you want...

Put a whole chicken in a pot with water around to cook...Clean chicken from the bone once done...Shred up and put favorite barbecue sauce over, put back on the fire, cook slow until ready to serve...I like making my own sauce using brown sugar, ketchup, mustard, diced onion fine, salt , pepper, garlic powder, onion powder, and liquid smoke...Toss in whatever you have is what I do...

Breakfast casserole...Beat up some eggs, add some milk, dab of lite margarine, browned turkey breakfast sausage, few slices of bread torn up, onions, green peppers, mushrooms...mix in some low fat cheese of your choice....salt and pepper, bake slow in skillet

Casserole...place some sliced up potatoes in a skillet, lay some chicken breast tenderloin strips on top, or ham, or browned ground turkey...add some onions, mix some milk with a few cans of cream of chicken, cream of mushroom, cheddar cheese soup ( optional)...pour over top, stir around lightly so soup will go down thru the potatoes...Sometimes I use some colby monterray cheese in mine instead of the cheese soup...Cover with foil and bake

In pot...brown up a few pounds of lean hamburger, or ground turkey...add 3 cups of water or so...pack of taco seasoning....cook done until water is gone....add a can of cream of mushroom soup, cube up some low fat velvetta cheese....Stir and coo****il cheese is melted....is so yummy....Can use tortilla chips to scoop it up with...or eat plain is just as good...I like to serve mine with low fat sour cream...guess you could put a dish of salsa out too....

Could always make a layer salad, and keep in an air tight dish in the cooler....Layer of lettuce, onions, cheese, baby carrots, celery, cauliflower...or whatever veggies you like...Mix together some low fat mayo, dab of splenda, milk...Pour over for top layer...I like to fry up some turkey bacon to crumble on top of mine...Then I sprinkle a handful of sunflower seeds on top...Can top with tomatoes and frozen peas ( thawed)

How about making meatballs in a skillet over the fire...Top with some spaghetti sauce...clean and slice/ cube up some squash and cook in water until soft....Serve meatballs over the squash...Or cube up squash ( dont cook) mix with meatballs and sauce in skillet...top with low fat motz cheese...cover with foil and bake...
