Hi everyone!
I was organizing my pantry and I found not one, but two, Costco 6-packs of canned sockeye salmon.  Does anyone have any recipes?  Maybe something like a crab cake or a loaf or something.  Anything?
Thanks!

I like canned salmon so here goes:
1.  take one can salmon and add to 1/2 jar of alfredo sauce, warm up and then put over ribbons of steamed zucchini (just use your veggie peeler to make long "noodles" of zucchini and then stir fry or steam them)
2.  make a salmon patty--one can salmon, 1 egg and 1 tsp onion (chopped) and a litte soy flour (or you can use reguar flour)--mix together, form into a patty, fry in a non stick pan with a little olive oil until brown on each side
3.  make salmon salad just like you woud make tuna salad--serve on celery or with carrots
4.  Mix 2 cans salmon with 1 can cream of celery soup and 1/2 can water--warm up and served over cooked mashed califlower or brown rice--garnish with mixture of chopped parsley, basil and/or rosemary
5.  crab loaf--substitute for the beef--keep everything else the  same--cooking time the same
6.  fish soup--get fresh clams, shrimp and turnips.  Dice turnips, coo****il tender, discard water.  Use the juice from 2 cans and some water to make a base for soup--add pepper and 1/2 jar salsa.  Bring to boil, add diced turnips, salmon and then clams--cook about 4 minutes (clams need to be tighty closed and well cleaned before you drop them into soup base--when they pop open, they are cooked).  Clean shrimp and devine--add at the last minute--coo****il they turn pink--probably 2 minutes.  Variations:  add haibut (or any other firm fish) instead of clams, use a variety of veggies instead of turnips.
7.  mix a can of salmon, 1 brick fat free softened cream cheese and some cajun spices.  Serve with jicama, carrot and ceery sticks.
Enjoy

I make a salmon salad just like I would tuna salad.

Salmon, drained and deboned
mayo enough to keep it moist ( I use Kraft olive oil)
onion finely diced
pickle relish (sugar free)
Lemon juice (a teaspoon or so)

Mix well and eat with saltines.

I just had a new one last night and really liked it.  It had 1 can salmon, feta cheese, sliced cucumbers and dill.  The salmon has enough moisture so you don't need any dressing.  I thought it was super good and full of protein!

Ok, feta cheese is like my all time favorite thing.  How much cheese for 1 can salmon?  I am liking this recipe!
