SO I have a question.........what is your favorite high in protein meal to eat that fills you up? I need some yummy new recipe & maby ya'll could help me out! Quick to easy to detailed I really don't care, I love to cook & try new things. So let's hear them people give out your secret family recipe that bushes beans won't even give out!!!!!!

One thing I have been cooking once a week lately has been, Jalapeno White Beans w/ Jalapeno Deer/chicken Sausage (out of the casing). For a half of cup the beans give you 15 grams of protein & the meat gives you 7 grams of protein =22 grams not bad for a 1/2 cup of food!!!!!!

Directions:
* take a pound of your favorite sausage out of it's casing ( you could also use ground turkey )
   brown in a cast iron pot ( or what ever you have )
* add a whole chopped up onion, a whole chopped up bell pepper, a spoon full of minced garlic,
   & about 20 jalapeno slices ( also pore 1/4 cup of jalapeno juice from the jar ), cook down w/ ground meat until all veggies are soft (20Min's)
* then add 5-6 can of Trappey's Jalapeno White Beans w/ the juice
* Season to taste & cook down for about 3 hours
*** We love spice down here, so if you don't skip the jalapenos****

You like hot?? This melts the lining of your mouth!! Yummy..

Chicken Meatballs with Habanero Hot Sauce

Ingredients
1 pound ground white meat chicken or turkey
1/2 small onion, grated
2 cloves garlic, minced
1/3 cup parsley, chopped
1 tsp of smoked Paprika
Salt and freshly ground black pepper
Recipe for hot sauce

Directions
Preheat oven to 400F.

Combine the ground chicken, onion, garlic, parsley and paprika. Season with salt and black pepper.

Shape meat mixture into small balls, the size of golf balls. Bake in oven for 20 minutes..

While the meatballs are baking, make the hot sauce. Toss the baked meatballs in the hot sauce to coat.
 

Habanero Hot Sauce

1 C Frank's Red Hot Pepper Sauce
6 habanero peppers chopped fine
3 chipotle peppers chopped fine
3 Tbls garlic, minced
1/4 C butter
2 tbs Agave Nectar
1/4 C vinegar
1 Tbls dijon mustard
1 Tbls chili powder or seasoning
8 drops sweetzfree
salt to taste
 

Saute habanero peppers and garlic in butter for about 15 minutes. Add chopped chipotle peppers, hot pepper sauce, vinegar, mustard, chili seasoning, SweetZfree, Agave Nectar, salt and pepper. Simmer for about 30 minutes.

Katherine, this sounds yummy, but I have a question.   Here in the mid-Atlantic, we don't get the same brand name stuff that you do in LA.  So I was wondering if you could advise on a substitute for the Trappey's beans because I've never seen those around here.  I was thinking I could just cook beans from scratch, but I wonder what spices are in the Trappey's that I would want to duplicate.  What do you think?

            Sorry it has taken me soooooo long to get back to you!!!! I think cooking the beans from scratch would be just as yummy, I just take the easy way out...lol...I bought some more beans today to make this tonight, so now I can tell you what is in them, basically they are cooked down w/ bacon & jalapenos then seasoned w/ salt & onion powder. They are just as yummy as if I had cooked them myself, just w/ out the day in a half of getting ready to eat :)

This is how I cook them from scratch, everyone is different but this is my two cents. I get a pound of dried beans & soak them over night in a bowl of ice water. Then the next day I boil them for 15 minutes w/ jalapeno juice in my water, then it's back into ice water 15 more minutes, & IF they are still a little to hard I will boil them one more time, but usually I don't have to.......................Then I start my recipe w/ the meat. Hope this has helped you!

Yummy!  I'm going to make this for myself next week.  Sooooo looking forward to it.  Thanks for the cooking tips.  You are the next Emeril in the making.  :)
