Greek Yogurt
I've noticed there are a lot of great WLS friendly recipes that call for Greek yogurt, but I have not been able to find Greek Yogurt here in Canada. There is one Mediteranean yogurt, which is thick & delicious, but sadly very high in fat. So I make my own and I thought I'd share it, just in case this has not been posted here before:
2 cups fat free plain yogurt
1 coffee filter
1 strainer and 1 bowl
Just place the coffee filter inside a strainer that has been placed over a bowl. Place the yogurt into the coffee filter. Let it sit in the fridge overnight.
The next day you will have a wonderful thick fat free yogurt and you won't believe how good it is.

Well, fat free yogurt right out of the container is quite thin. If a recipe calls for Greek yogurt, they are referring to a yogurt that is very thick, almost like sour cream or even soft cream cheese. So doing this turns plain FF yogurt into something with the consistency of cream cheese. Perfect for recipes like Tzaticki, cheese cake, dips, etc...
Not sure where in PA you live, but I've found greek yogut at Giant Eagle (know there are plenty of those in many parts of PA). You'll either find it in the organics section or sometimes they carry the Oikos brand (made by Stoneyfield Farm) in the regular dairy section.
