LOW Carb: Stall Busting Terragon Chicken! Super tasty...
Heya Gang! I hope life is treating all of you kindly and stuff...I had a few recipes get buried a week ago, so if you get the chance go a few ages back and take a gander....I'm sure I'll repost sometime in the future... Anyway I fix this dish pretty often and I know that a lot of you are newbies, so instead of breast, i chose thighs.... this stuff is so tasty. I try to make this so everyone in the family can eat low carb, not just those who are in need of breaking the stall or getting to goal.... I hope you enjoy it as much as I do...
Tarragon Chicken
Serves 4
8 bone-in, skin-on chicken thighs
3 shallots, cut in half
6 strips of bacon, roughly chopped
4 large bay leaves
salt and pepper
zest from ½ lemon
1 Tablespoon of Olive Oil
Tarragon sauce:
2 tablespoons grainy mustard
1/2 cups white wine
2 large bunches tarragon, chopped (fresh tarragon is so awesome!)
1 teaspoon Olive oil, mix with lemon zest
Preparation:
Preheat oven to 375 degrees. Salt and pepper the chicken thighs and place them in a large baking dish. Add the bay leaves, and then the bacon. Place the shallots in between the thighs and bake for 40 minutes. Coat chicken with olive oil lightly.
Meanwhile, mix the white wine, mustard, teaspoon olive oil, and tarragon together and coat the chicken liberally with the sauce (after the chicken has cooked for the 40 minutes as listed above, place back into the oven for 10 more minutes.
Serve while hot. Broccoli and cucumber salad (on the side) make this dish amazing….
Not enough carbs in this to worry…so my guess would be able 3 carbs per serving….if it’s 5 who would care? It’s all about living the good life while losing weight….. I’m skinny and I eat better than anyone I’ve ever seen…. Surgery and the ultimate prepared food choices make it the easiest plan. If you want to start, give me a shout, I’m always willing to help!

Thanks for the great recipe. I've started a T-file on my pc, so I just cut and paste and COOK! I have my dh an dd eating low carb now. I am having so much fun buying the GOOD ingredients, and since I eat so little (I am 48 days post op), it's so worth it.
