Meatball Mushroom Stoup
Meatball Mushroom Stoup...(Yes it is spelt correctly !!)
1 lb. ground beef
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/8 tsp. black pepper
1 large egg
Mix these ingredients together & form into small meatballs.
1 Tbsp. olive oil
1/2 cup chopped onion
1 clove chopped garlic
1/2 cup sliced carrots
1/4 cup diced turnips{optional}
2 cups button mushrooms
10 0z. can beef broth
10 oz. can mushroom soup
2 T. tomato paste
2 T. whole wheat flour{optional}
In the oil brown the meatballs ,then put them into a deep casserole.
Brown the onions& garlic then add to the casserole.
Put the broth, soup & tomato paste into the frying pan; stir well & heat to boiling.Pour over the meatballs & onions.
Prepare the vegies then add them to the casserole.
Cover & place in a pre-heated 325 degree oven; bake for at least 2 hours.
If the gravy is too runny make a runny mixture with the flour & some water.Mix into the casserole & put back into the oven till it reaches a boil again.
Carb count per serving WITHOUT the flour:5.6 -1.4 gr. fiber=4.2 carbs.
Carb count WITH the flour: 6.9- 1.4 gr. fiber= 5.5 carbs
Note: I think we could use another ty6pe of flour here...Maybe soy flour
