Meat Loaf Fajita Style

Serving Size  : 6

   2 Pounds Ground Beef, Lean
   1/2 Cup Chopped Onion
   1 Package Fajita Seasoning - Mexicasa
   1 Cup Shredded Cheddar Cheese
   1/2 Cup Chopped Celery
   1/4 Cup Olives - Pc Stuffed Manzanilla
   2  Eggs

Chop onion and celery into small pieces.  Spray frying pan with Pam and saute onion and celery just until softened.
Now combine all the ingredients and mix well.
Divide between 18 muffin cups.  Bake at 350 for about 45 minutes.  Enjoy

Fat - 40.3g
Carbs - 6.4g
Fiber - .4g
Protein - 33.6g

NOTES : If you want to make it as a loaf - place all ingredients into a loaf pan and bake at 350 for about 1 1/2 hours

246 in Dec 2008 before banded 1/28/09 at 215 lbs, band crapped 9/09 at 170 lbs and struggled with it and regained to 203 revised to bypass on 8/1/11 and am very happy.
