Spinach Salad with Hot Bacon Dressing

Ingredients:

• 1 bag fresh baby spinach
• 1/4 cup chopped onion
• 4 slices bacon
• 2 hard boiled eggs, chopped
• 1/4 cup vinegar
• 1 pkg Splenda
• salt, pepper                       

  Directions:

  • Cook bacon. Remove and drain on paper towel.

  • Slowly add vinegar, pepper and splenda to bacon grease in pan. Stir and heat till boiling.

  • Tear spinach into smaller pieces. Add chopped egg, onion, and crumbled bacon.

  • Pour on hot dressing and toss lightly. Serve immediately.
