Can YOU help me alter this Muffin recipe?

My dad makes these muffins and I absolutely love them.  My mom e-mailed me recipe lastnight and I was thinking that they aren't exactly WLS friendly.  They have brown sugar and molasses in them. I would say I could put the Splenda Brown Sugar blend in, but that would just ruin them. And doesn't molasses have ALOT of sugar in it? (I have asked that before and no one answered me) And what about the oil?

  Oat Bran Muffins  3 cups oat bran  
1/4 c. brown sugar 1/4 c. molasses 2 eggs 1 cup milk 3 tsp. baking powder 1/2 tsp salt 1/2 c. oil    Bake 425  for 17 minutes

Hi Julia--you are right--both brown sugar and molasses have lots of sugar--a big NO NO if you are trying to keep losing wieght or are diabetic.  Even Splenda Brown sugar has  regular brown sugar sugar so you get the taste and only some of the carbs from all regular brown sugar.  No, the muffins are not going to taste exacty the same--but you can use Spends brown sugar  and get something that is a muffin .  The oil is ok in moderation according to my doc.  You may have to wait unti you hit your goals and then have your muffins exacty like mom made.  My taste have changed--at seven months I tried a Diet Coe which I used to love and drink everyday and found it horrible.  I have tried the low carb muffin mixes avaible on the net and found them just not right at all so the dogs ended up with them.  You might check eggface's site --she might have a recipe you coud use.  Her stuff is consistenty WLS friendy and tasty.  Good luck.

Julia23, I had my Fobi bypass 10.5 yrs ago and I play with many recipes. 

Hi there! I would recommend using
1 cup oat bran
1 cup almond meal (trader joes)
1 cup carbquik(r)
1 cup splenda(r) granular
1/4 cup diabetisweet (r) (grocery store or netrition.com)
1 tsp molasse
1 tsp unsweetened vanilla extract
2 eggs
1/3 cup half/half
2/3 cup unsweetened almond breeze
1 tsp baking powder
1/2 tsp salt sense(r)
1/4 cup melted butter
1/4 cup applesauce unsweetened

the baking time may be different, and I would bake at 375 at least for the first batch to enable you to watch a bit closer.  Bake 17 to 23 minutes or until well cooked and toothpick comes out dry or w/ a crumb ( if ingredients aren't wet enough, could add a bit more liquid, or if too wet, try a bit more almond meal)

True, Molasses has alot of natural sugar but the iron content is very healthy an it is natural & used here for depth of flavor and color.  Diabetisweet is also available in a "brown", but we don't use it due to the artificial dyes, so I don't know if you would prefer that or not. Brown Splenda is half sugar I think, not really the best choice.

(when you wish to use Br Splenda in a recipe use 1 tsp or less )

For any muffin recipe that calls for oil, yoi can replace it with the same amount of unsweetened applesauce or plain fat free yogurt...
