Chicken Piccata

Ingredients

  • 2 skinless and boneless chicken breasts, butterflied and then cut in half
  • Sea salt and freshly ground black pepper
  • All-purpose flour, for dredging
  • 6 tablespoons unsalted butter
  • 5 tablespoons extra-virgin olive oil
  • 1/3 cup fresh lemon juice
  • 1/2 cup chicken stock
  • 1/4 cup brined capers, rinsed
  • 1/3 cup fresh parsley, chopped

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.

In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

The recipe looks yummy, but that amount of fat (the butter and Olive Oil) add 1200 calories, or 300 calories a serving.  You could substitute and use either a Olive or Butter flavored PAM type spray.  Maybe use 1/2 tsp each time you brown if you really want too,

I love lemon in almost anything, I will have to try this next time I have some chicken breasts

The amount of fat (with the butter and oil) is a little high - that's why it's in servings. Served with veggies - it's not a bad splurge dinner. You can try it with PAM but I will warn you it will not taste the same. If you notice the recipe does not call for you to remove the drippings - this is because the butter and oil create the base for the piccata "sauce" - you won't have that with the cooking spray. Just an FYI.

However, you can replace the butter with I Can't Believe Its Not Butter - which will reduce the calories from the butter aspect.

I only had 1/2 a breast with no added sauce, so I didnt really get that much fat.... I've lost 86 lbs since August, this was a treat for me :)

I'll save the recipe and will make it for a special occasion, and eat without the added sauce, that will definitely be a treat!
