The other day I noticed we still had A LOT of Strawberries in the freezer from last year and Spring is already here. This means, I've been trying to find ways to eat them. I also had a 4# container of Yogurt (Costco) and one can eat only so much Yogurt as is; so, I decided to try my hand at making Frozen Yogurt.
Ingredients
1 pound frozen strawberries
2 cups plain fat free yogurt
2/3 cup sugar
2 tsp Kirsch (or Vodka)
1 tsp lemon Juice
Directions
The day before put the yogurt in a coffee filter lined strainer and make yourself about a cup of strained yogurt.
Then, let the strawberries thaw and puree them in a blender with their juice, etc. Strain the berries into the yogurt.
Stir in the sugar, Kirsch and lemon juice. Let chill, then process in your ice cream maker.
Yield: about 8 x 1/2 cup servings: 120 calories, 26g carbs, 4g protein, 0.3g fat
Cooks notes:
It's got carbs! Well, yeah: it's "ice cream".
Can I use Splenda? Theoretically yes BUT sugar is an anti-freeze. The results won't be as creamy
