Jiffy Mexican Burrito's

This is a really good recipe that I have eaten often, and since my RNY ...I think it can still be one of my favorites.

Jiffy Mexican Burrito

1-14oz can refried beans

75ml salsa or can use water
4- 9 inch tortilla shells
1 medium tomato, chopped

4 small green onions, chopped
1/2 sweet red pepper, chopped
1 cup mozzarella cheese, shredded
lettuce
salsa or taco sauce
sour cream or greek yogurt

  Combine beans and salsa (or water); mix well. Thinly spread about 1/3 cup of bean mixture over each tortilla, leaving 1-inch of a border. Sprinkle tomato, green onions, green pepper (if using) and half the cheese over tortilla.
Roll up each tortilla and place seam side down in a lightly greased baking dish. Bake in a 400 degree oven for 10 minutes. Sprinkle remaining cheese over tops of burritos. Bake for 5 minutes longer or until heated through and cheese is melted.
Serve each Burrito on a bed of shredded lettuce, with salsa or taco sauce, sour cream or greek yogurt.
