Mini pumpkin muffin (X-post)
So I have been craving pumpkin as of late so I came up this recipe tonight and it totally satisfied my pumpkin and protein need. Enjoy
Mini Pumpkin muffins
1 cup Canned Pumpkin
5oz Evaporated Milk
2 scoops Vanilla Protein Powder
1 cup TVP – Crushed in magic bullet
2tab Flax Seeds
½ cup Egg Beaters
¼ cup Splenda Brown Sugar Blend
2tab Torani Vanilla Syrup
Pumpkin Pie Spice and Cinnamon Spice to taste
Preheat oven to 350oF. In a large mixing bowl whip together the eggs, pumpkin, evaporated milk, brown sugar blend, and vanilla syrup. In another bowl mix the protein powder, crushed TVP, flax seeds, and spices. Add slowly to the wet ingredients. Spray a mini muffin tin with pam. Pour batter into the muffin tin and bake for 7 minutes at 350oF, then lower the temperature to 300oF and bake for 12 minutes. Yields 39 mini muffins.
The stats per mini muff using my ingredients is: Cal: 31.5, Fat: 0.4g, Carb: 3.0g, Protein: 3.5g

TVP is textured vegetable protein. You can but it at most any health store such as whole foods or Trader Joes. Also Bob Red Mill Farm makes TVP and can be found in the baking section of your grocer.
