This is the one I always use:
2 cups of fresh basil
6 cloves garlic
1/2 cup pine nuts
Pinch of salt
EVOO
1/4 cup fresh Parmiggiano Reggiano cheese, grated
Roast pine nuts, add to food processor and pulse until finely chopped. Wash basil, then toss into the food processor along with the garlic. Pulse until the basil and garlic are finely chopped and look to have a paste-like consistency. Add a pinch of salt, then about 2 tbsp of evoo. Pulse for 10-15 seconds. Add grated cheese until pesto looks pasty. If too thick, add more oil - if too thin, add more cheese.
