RECIPE NEEDED...

HELLO, EVERYONE,
THIS IS THE FIRST TIME I HAVE POSTED ON RECIPE FORUM.  I HAVE BEEN CRAVING FOR LONG JOHN SILVER'S OR CAPTAIN D'S  HUSH PUPPIES.  OH MY, IT IS DRIVING ME NUTS!  I KNOW WE CANNOT COOK IN OIL SO, DOES ANYONE HAVE A RECIPE FOR HUSH PUPPIES THAT WE CAN BAKE?  I SURE HOPE SO!

Hi Joy, I found this on the internet. I don't know about the baking part. I saute things in olive oil with no problems..

LC Hushpuppies

1/2 cup Carbquik
1/3 cup hazelnut flour
2 tablespoons soy grits
1 whole egg, slightly beaten
1 drop sweetzfree
1/4 teaspoon pepper
dash of red pepper
1/4 teaspoon salt
1 small onion, chopped
light beer, just enough to moisten
Form into balls and deep fry.

I  have a question, why not just use cornmeal with a little wholewheat flour to hold it together?  Can you not have cornmeal with the RNY?  Sorry just wondering, I have lots of friends that are RNY's and I never fed them because I am afraid I will make them sick with something I can eat and they can't.  I can do flour except I absorb 100% of it so I like to use corn and whole wheat.  Thanks for your answer ahead of time.

Thank you Terry.  I have not heard of the hazelnut flour.  Does it actually taste like hazelnut?  I will make this by putting the "balls" in a muffin pan.  I am sure it will be delicous.  For some reason, anything with oil makes me sick.

Hazelnut four/ meal is just ground up hazelnut.  Same goes for almond flour/ meal...

I have lots of almond meal in my house, so I would probably try that instead of the hazelnut meal. I think it might be a bit more expensive and harder to find, but I have not been out looking for it..  As for the oil, I sometimes saute things in olive oil with alittle butter. No issues there. It is not very often though.

I want to thank you for the recipes!  Tomorrow I am going the store to purchase the special flour.  I wonder if I need cornmeal such as "Jiffy's" corn muffin bread to add to the flour?

Maybe straight Alberts or another variety of Cornmeal.  The Jiffy Corn Muffins probably have sugar that might be too much for your RNY.  Maybe if you only eat one you will be ok...!!

I bought some hush puppies mix in a bag at walmart...it has a recipe on the side to where you can fix it baked in the oven...Might want to check that out...
