Picnic Chicken Slaw
1 can (10.75oz) reduced-fat cream of chicken soup
1/2 cup red wine vinegar
1/4 cup 0% greek yogurt
2 cloves of garlic
1/2 t. splenda
1/2 t. salt
1/2 t black pepper
4 cups shredded green cabbage
2 cups shredded red cabbage
1.5 cups chopped, cooked chicken breast
1/2 c. seeded, chopped tomato
1/2 c. shredded carrots
1/2 cup sliced green onions (optional)
1/2 cup english cucumber peeled and chopped
Combine soup, vinegar, yogurt, garlic, sugar, salt and pepper in a food processor until smooth. Set aside.
Combine green cabbage, red cabbage, chicken, tomato, carrots, cucumber and optional green onions in a large bowl. Add soup mixture and toss well to coat. Refrigerate at least 2 hours to blend flavors.
