If you want easy and moist...

put a whole chicken (minus the giblets tucked inside) into a crock pot, sprinkle with whatever seasoning you like (cajun is my favorite) and cook all day.  It will be falling off the bone and so very moist.  You can eat like it is or debone and use for any recipe that you need cooked chicken for.  My whole family loves it this way.

This one is my favorite crock pot recipe:
Roast Sticky Chicken

4 tsp. salt
2 tsp. paprika
1 tsp. cayenne pepper
1 tsp. onion powder
1 tsp. thyme
1 tsp. black pepper
1/2 tsp. garlic powder
1/2 tsp. black pepper
1 large roasting chicken

In a small bowl, thoroughly combine all the spices. Remove giblets
from chicken, clean the cavity well and pat dry with paper towels.
Rub the spice mixture into the chicken, both inside and out, making
sure it is evenly distributed and down deep into the skin. The
chicken can be frozen at this point. Or place in a reseal able
plastic bag, seal and refrigerate overnight. When ready to cook, put
the bird into the crockpot and do not add any liquid. As the cooking
process goes on it will produce it's own juices. Cook on low 8 - 10
hours and it will be falling off the bone tender.

This one doesn't involve the crock pot, but it's EXCELLENT and so easy:

This one sounds strange... but comes out delicious and VERY moist:

Succulent Parmesan Chicken

1 lb boneless, skinless chicken breasts
1 cup mayo
쩍 cup shredded Parmesan
Dash of Oregano

Preheat oven to 375. Place 1 lb boneless chicken breasts in baking a dish.. Mix mayo and Parmesan together in a separate bowl. Spoon over chicken, add a dash of oregano and bake approx 30-40 minutes. (Check for doneness)
