Crockpot recipes for chicken?

Hi,

I have been on the look out for simple things I can make for work nights.  Anyone have any moist chicken favorites?  Using the crockpot would be great.

Angel Chicken

3- boneless skinless chicken breasts
1 0.7oz package of dry Italian dressing mix
1 10.75oz can of golden mushroom soup condensed
1 8oz package of sliced fresh white mushrooms
2tbsp light butter
1/2 cup dry white wine
4oz reduced fat chive and onion cream cheese

Place chicken and mushrooms in crock pot. Melt butter in a med. Saucepan; stir in Italian seasoning. Add the rest of the ingredients and stir until combined. Pour over chicken and mushrooms. Cover and cook on low for 4-5 hours.
Serve over noodles or rice for family...just chicken for you!!
Serves 6

Italian Chicken

1 15-16oz can pinto beans rinsed and drained
1 14 1/2 oz can diced tomato with basil garlic and oregano undrained
1 9oz package frozen artichoke hearts
1 4.5oz jar sliced mushrooms drained
1 1.4oz envelope of vegetable soup mix
4 skinless boneless chicken breasts
1 10.75 oz can condensed cream of chicken soup
1/3 cup bottled italian dressing

Combine beans, tomatoes, artichoke hearts, mushrooms and vegie soup mix in a slow cooker. Place chicken on top. Stir together soup and dressing and pour over chicken.
Cover cook on low for 5-6 hours.

245 cal/ 7g fat/ 30g protein

Hi Emily-

I am not a normal recipe poster BUT this one I have for you, and it is super easy...

4-8 boneless, skinless chicken breast (depending on how many you want to feed)
1 to 2 can(s) of chicken broth (I use low sodium) 
1 to 2 packets of dry taco seasoning such as McCormick's

Sorry the quantities are exact, it all depends on how many people and how flavorful you want it to be.

Put in crock pot on low for 6-8 hours, I have a crock pot that I can pre-set and it allows me to cook on low for 5 hours and then set to warm until I get home.

When you get home from work, you will be able to just pull the chicken apart with a fork. I use this meat for taco salads, add sour cream, cheese and chilies wrap in low carb tortillas for yummy enchiladas...It also makes a great chicken salad, gives it a small kick. I know you could also switch up the spices (say basil and bay leaf) and make chicken with low carb pasta (a take on my wonderful mother's chicken noodles a bit more fattening favorite of mine). Sky's the limit.  

I have made this for large parties of "make your own tacos" and for small groups of friends.

All of these start the same:  place 1/2 cup water in bottom of crockpot and then the chicken.  Next pick one of these to top the chicken:
1.  1 cup salsa, 1 cup sour cream
2.  1 small can chili verdi (green chilis)
3.  1 chopped onion, three chopped tomatoes, 2 tbs curry powder
4.  1/2 jar sugar free apricot jam and red peper flakes to taste(I use 1/2 tsp)
5.  1 can cream of celery soup and 1/2 bag baby carrots
6.  1 jar alfredo sauce, 4 chopped green onions
7.  1 jar spagetthi sauce and 1 cup shredded cheese
Mix everything up and cook 6-10 hours on low.  Enjoy

I'm obsessed with my crockpot - being pregnant and working full time - the last thing I want to do is come home and cook a gourmet dinner. Most of the time it comes out like one anyway. My favorite lately has been chicken smothered in cream of mushroom soup. I add some fresh mushrooms, a packet of onion soup mix, and some gravy master. Let it cook on low all day. I usually give it to the mister over rice. But it's fine the way it is for me, once in awhile I'll add some rice to mine too. It's really good.

whole chicken (I remove as much skin as poss...) dump a lite bbq sauce on it about 3/4 of a bottle... cook on low all day... pull chicken off bones put back into crock pot add the rest of the sauce and I add a little garlic powder, black pepper and cumin... serve on rice... sketti squash, low carb tortilla... all alone... yummy

Here's one more.....

Chicken Lickin'

Servings: 8   

3 lbs. chicken legs, thighs and/or breasts

½ tsp  ground ginger

½ tsp  chili powder

16 oz. canned tomatoes

1 large onion, chopped

4 oz. mushrooms, sliced & drained

1 clove garlic, minced

1 ½ tsp  salt

½ cup light cream

2 tsp  paprika

 

Rinse the chicken parts and pat dry.  Brown the chicken on all sides.

Place the chicken in the slow cooker.

Combine all the other ingredients except the cream together. Mix well. Pour over the chicken. Cook on LOW for 8 to 10 hours. Stir in the cream just before serving.

Per Serving: 302 Calories; 7.8g Fat (23% calories from fat); 50.7g Protein; 5.2g Carbohydrate; 1.4g Dietary Fiber; Sugar 2.6g; 139mg Cholesterol; 552mg Sodium.
