Sorry I did not get to this before now. I don't have any ideas for you off the top of my head. i tend to just broil or sear pork chops. I don't use sausage much unless it is turkey or chicken. I love the web site allrecipes.com. They have a healthy section and you can put in your main ingrediant and it will come up with ideas. I am also pretty sure that there are pork chop recipes on hear from Thomas  AKA hear me roar.

is your sausage link sausage?  I like to take (and I use turkey link sausage) cut up in circle and stir fry with onions and peppers.  Just spray your skillet with pam and cut your veggies up and thrown all of it in coo****il veggies are tender yet still crunchy.  The pork chops I like to just bake with lemon pepper or wash them and pat dry and make my own bread crumbs with say 20 wheat crackers.  I season my chops then use egg beaters to dip my chops in then the homemade bread crumbs and bake like that.  Fried baked porkchops.  As far as the peppers I dont eat them stuffed so can not help you there.
