Home Made Sugar-Free Syrups

Hi Gang,

I have seen a lot of questions on how to make the famous sugar-free syrups like Torani and DaVinci.  I read one that adds guar gum, which I tried and hated the way it thickened.  My syrups don't have any thickness to them even though the label says they use zanthan gum.  Anyway, I tested out my abilities and made almond flavor.  It turned out great.  It is jus****er (boiled), Splenda or Stevia (to taste) and almond extract (to taste).  I used almond oil because it's stronger and goes farther so it is cheaper in the long run.

If you are looking for a place to buy extracts that are somewhat cheaper go to www.spicebarn.com and they have every extract known to man.  I had to limit myself because they all sounded so wonderful.  The shipping is about $2 a bottle, but the more you order, the less it is when you divide it up.  I bought Hazelnut and Macadamia Nut for now and am going to experiment with my Haupia (I guess it won't be called that anymore if it's not coconut) and also the egg custard recipe that I LOVE!  If it all works out, I'll post some recipes for Hazelnut and Macadamia Nut custards.
